Banana Nut Bread

  • 1/2 c. shortening
  • 1/2 c. sugar
  • 2 eggs
  • 1 3/4 c. sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. mashed ripe bananas
  • 1/2 c. chopped nuts

Directions

    Cream together shortening, sugar and eggs; beat well. Sift dry ingredients together. Add to cream mixture alternately with banana, blending well after each addition. Stir in nuts. Pour into well greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 45 to 50 minutes or until well done. Remove; cool on rack. Wrap and store overnight.
