Banana Nut Bread

Ingredients

  • 1/2 c. vegetable oil
  • 1 c. sugar
  • 2 eggs, beaten
  • 3 bananas, mashed well
  • 2 c. sifted plain flour
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. milk
  • 1/2 tsp. vanilla
  • 1/2 c. chopped nuts

Directions

    Beat oil and sugar together. Add eggs and bananas, beat well. Sift flour, soda, baking powder and salt.

    Add to first mixture with milk and vanilla.

    Beat well, and stir in nuts.

    Bake in 9 x 5 x 3-inch loaf pan, lined on the bottom with waxed paper at 350° for about 1 hour.

    Cool well and store airtight.

    A good keeper, the vegetable oil and bananas keep it moist.
