- 2 ounces walnuts, whole
- 2 -3 large bananas, very ripe
- 8 ounces self-raising flour
- 1/2 teaspoon salt
- 4 ounces butter, softened
- 6 ounces caster sugar (US superfine sugar)
- 4 ounces sultanas (US golden raisins)
- 2 eggs, beaten
Directions

1Put the walnuts into a food processor bowl and process until coarsely chopped.

2Peel the bananas and break each into 4 pieces and process with the walnuts until mashed.

3Add the remaining ingredients and process untill well mixed.

4Spoon the mixture into a large greased loaf tin.

5Smooth the surface and bake for 1-1 1/2hrs at 350 degrees or until a tooth pick comes out clean.

6Cool in the loaf tin for 15 minutes then turn out onto a cooling rack.
