Banana-Pecan Bread

  • 1 3/4 c. all-purpose flour
  • 2/3 c. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 c. margarine or butter (1 stick), softened
  • 1 c. mashed bananas
  • 1/2 c. pecans, coarsely chopped or walnuts
  • 1 tsp. grated lemon peel
  • 2 large eggs, slightly beaten

    Preheat oven to 350°.

    Grease a 9 x 5-inch loaf pan.

    In large bowl, mix first 5 ingredients.

    With pastry blender or 2 knives used scissor fashion, cut in margarine or butter until mixture resembles coarse crumbs.

    Stir in bananas, pecans, lemon peel and egg just until flour is moistened.

    Spoon batter evenly into loaf pan.

    Bake bread 45 to 55 minutes or until toothpick inserted into center of bread comes out clean.

    Cool bread in pan on wire rack 10 minutes.

    Remove from pan and finish cooling on wire rack.

    Makes 1 loaf.
