- 2 1/2 cups sliced bananas
- 2 tablespoons lemon juice
- 1 cup sugar
- 1/8 teaspoon salt
- 1 tablespoon grated orange rind
- 3 eggs, separated
- 1 1/2 cups milk
- 2 cups cooked rice
Directions

1Mash bananas, then add lemon juice.

2Stir in 2/3 cups sugar, salt, orange rind, egg yolks, milk and rice.

3Pour into baking dish and set in pan of water.

4Bake at 350 degF for about 35 minutes.

5Beat egg whites until stiff and add remaining sugar.

6Spread over pudding and bake about 15 minutes longer.
