  • 2 x strips, (2x1/2 inch) lemon peel
  • 1 lrg ripe mango, minced
  • 1 Tbsp. fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt Vegetable cooking spray
  • 3 lrg ripe bananas, cut up
  • 1 Tbsp. all-purpose flour
  • 2 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 tsp dark rum
  • 3 lrg Large eggs, separated
  • 3 Tbsp. sugar, divided

    Just whirl the bananas in the blender, fold into beaten egg whites and bake.

    Make Mango Sauce: Heat water, sugar and lemon peel to boiling in saucepan; reduce heat and simmer 2 min.
