Banana Split Cake

  • 3 sticks margarine
  • 2 c. crushed graham crackers
  • 2 eggs
  • 2 c. powdered sugar
  • 1 large can crushed pineapple, drained
  • 5 bananas
  • 9 oz. Cool Whip
  • 1 small bottle cherries
  • 1 1/2 c. chopped pecans

    Melt 1 stick margarine and combine with graham cracker crumbs. Pat mixture firmly in bottom of 13 x 9 x 2-inch pan.

    In large bowl, combine eggs, remaining margarine and powdered sugar and beat mixture for no less than 15 minutes.

    Add crushed and drained pineapple.

    Spread mixture evenly over graham cracker mixture and cover with sliced bananas (brush with lemon juice to prevent darkening).

    Next, smooth on Cool Whip to cover mixture completely.

    Garnish with nuts and sliced cherries.

    Chill overnight.
