Barbacoa(Roasted Beef)

Ingredients

  • roast (rump or boneless sirloin)
  • 3 cloves garlic
  • 1 1/2 tsp. peppercorns
  • 1 tsp. cumin (more if desired)
  • 2 to 3 Tbsp. chili powder (mild or hot)
  • 3 to 4 bay leaves
  • 1/2 to 3/4 c. water

    Turn on crock-pot and place meat in.

    Make slices in meat and put cloves of garlic in.

    Sprinkle meat with cumin and chili powder.
  4. 4
    Place bay leaves on top.

    Add water and sprinkle with salt.

    Cook on high for 8 hours or low all day.

    When meat is done and very tender, remove from pot and cool.

    Shred beef with fingers and place back in crock-pot, along with the juices that are already in there.

    Salt to taste.

    Serve with flour or corn tortillas, salsa (pico de gaio), shredded lettuce and tomatoes.
