  • 3 to 4 lb. chuck roast
  • 1 large onion, chopped
  • 1/2 c. chopped celery
  • 2 Tbsp. vinegar
  • 2 Tbsp. brown sugar
  • 4 Tbsp. lemon juice
  • 1 c. ketchup
  • 2 Tbsp. Worcestershire sauce
  • 2 tsp. chili powder
  • 1 1/2 c. water

    Preheat oven to 350°.

    Trim all visible fat from roast. Place in roaster

    or Dutch oven (do not brown). Mix together all other ingredients

    Cover and bake until well done.
