Barbecue Black-Eyes

  • 4 slices bacon
  • 1 onion, chopped
  • 1 rib celery, sliced
  • 1 carrot, diced
  • 3 c. cooked black-eyed beans
  • 1 c. bean liquid
  • 1/4 c. barbecue sauce
  • 1 tsp. prepared mustard
  • 1/2 c. green pepper, diced
  • 1 c. barbecue potato chips, coarsely crushed

Directions

    In a large skillet, cook bacon strips until crisp.

    Remove from pan. Add onion, celery and carrot to drippings in pan and cook until tender, stirring frequently. Add beans, liquid, barbecue sauce and mustard.

    Mix lightly.

    Cook over low heat 15 minutes, adding more liquid if needed.

    Stir in green pepper and barbecue chips.

    Let simmer 5 minutes longer.

    Serve topped with bacon.
