- 4 slices bacon
- 1 onion, chopped
- 1 rib celery, sliced
- 1 carrot, diced
- 3 c. cooked black-eyed beans
- 1 c. bean liquid
- 1/4 c. barbecue sauce
- 1 tsp. prepared mustard
- 1/2 c. green pepper, diced
- 1 c. barbecue potato chips, coarsely crushed
Directions

1In a large skillet, cook bacon strips until crisp.

2Remove from pan. Add onion, celery and carrot to drippings in pan and cook until tender, stirring frequently. Add beans, liquid, barbecue sauce and mustard.

3Mix lightly.

4Cook over low heat 15 minutes, adding more liquid if needed.

5Stir in green pepper and barbecue chips.

6Let simmer 5 minutes longer.

7Serve topped with bacon.
