- onion, chopped
- celery, chopped
- green pepper, chopped
- vinegar
- garlic powder
- salt to taste
- pepper to taste
- Open Pit barbecue sauce
- hot chili pepper
Directions

1Put pig tails in roaster pan with onion, celery, green pepper, vinegar, garlic powder, salt and pepper. Cover pan with water. Put in oven at 350° until very tender.

2Pour off all liquid. Add barbecue sauce and hot chili pepper.

3Bake with lid off pan for 10 minutes.
