Barbecued Armadillo

- 1 tsp. crab boil
- 1 c. barbecue sauce
- 2 Tbsp. Dale's steak seasoning
- 1 stick butter
- 1 Tbsp. liquid smoke
Directions

1Remove the shell and skin and wash thoroughly.

2Soak the armadillo in salty water overnight in the refrigerator.

3Cut the armadillo into pieces like chicken.

4Place in covered pot and cover with water and add crab boil.

5Boil for 30 minutes or until tender.

6Remove and brown in butter, then place in shallow baking dish and brush on mixture of melted butter, Dale's steak seasoning, liquid smoke and barbecue sauce.

7Bake at 300° for one hour.

8Baste every 20 minutes.

9Serves 2.
