Barbecued Soybeans

Ingredients

  • 2 1/4 c. large, dried soybeans, soaked and cooked
  • water soybeans were cooked in
  • 1/2 c. onion, chopped
  • 2 Tbsp. oil
  • 1/2 c. catsup
  • 1/2 c. green pepper, chopped
  • 1 1/2 tsp. dry mustard
  • 1/8 tsp. cayenne pepper
  • 1 clove garlic, minced
  • 1/2 c. tomato juice
  • 1 Tbsp. molasses
  • 2 Tbsp. honey
  • 1/2 c. parsley, freshly chopped
  • bacon strips (for garnish, optional)

Directions

    Preheat oven to 350°.

    Put cooked soybeans with their liquid into a lightly oiled casserole.
  3. 3
    Saute chopped onion and minced garlic in 2 tablespoons of oil until golden, but not brown.

    Remove from heat and add to cooked soybeans.

    Add the tomato juice, catsup, molasses, chopped green pepper, honey, dry mustard, chopped parsley and cayenne pepper.

    Mix together thoroughly.

    Lay strips of bacon on top of soybeans, if desired.

    Place in preheated oven and bake 1 1/2 hours or until soybeans are tender.
