Barley Casserole

- 1 c. pearl barley
- 1 large onion, minced
- 1 c. sliced raw mushrooms
- 3 c. chicken consomme (boiling hot)
- 6 Tbsp. butter, divided
- salt and pepper to taste
Directions

1Heat 2 tablespoons butter and saute in it briefly.

2Transfer barley to heavy casserole.

3Heat 2 more tablespoons butter and saute onion in it.

4Add to barley.

5Saute mushrooms in remaining butter and add to barley mixture.

6Stir in hot consomme and salt and pepper to taste.

7Cook, covered, stirring occasionally in 325° oven until barley is tender and has absorbed the consomme, about 30 to 45 minutes.

8Makes about 6 servings.
