Barley Pilaf

Ingredients
- 3/4 c. finely chopped onion
- 3/4 c. sliced fresh mushrooms
- 1 qt. chicken stock
- 1/4 lb. butter or margarine
- 1 3/4 c. barley, washed until water is clear
- 1 tsp. salt
Directions

1Saute onions in 3 tablespoons butter 4 to 5 minutes.

2Add mushrooms; saute a few more minutes and remove from pan.

3Brown barley in remainder of butter, stirring often.

4Put in casserole; add onions and mushrooms, salt and 2 cups chicken stock.

5Bake, covered, in 350° oven for 1/2 hour.

6Add remaining stock; stir and bake 1/2 hour longer.

7Serves 10.
