Barley Soup

Ingredients

  • 2 qt. chicken stock
  • 1 c. bite size, cooked chicken
  • small onion, sliced in rings
  • rib celery, chopped
  • 1 c. pearl barley
  • small strip kombu*
  • 1 tsp. dried basil
  • 1/4 tsp. ground white pepper
  • 1 dash salt
  • 1/4 c. shredded carrots

Directions

    Combine all ingredients, except salt and carrots.

    Simmer until the barley is cooked, about 45 minutes.

    Season to taste with salt, if needed, and garnish with shredded carrots, if desired.
