- 1 cup pearl barley
- 2 12 cups low sodium chicken broth
- 34 cup carrot, diced
- 34 cup celery, diced
- 34 cup onion, diced
- 1 cup salsa
- 1 tablespoon butter
Directions

1Preheat oven to 350.

2Melt butter in skillet, add carrots, celery and onions.

3Saute until onions are transparent.

4Add barley.

5Saute for a couple minutes.

6Add salsa and mix everything together.

7Pour mixture into 13 x 9 baking dish.

8Cover and cook for 1 to 1 1/4 hour or until liquid is absorbed.

9Remove from oven and let rest covered for 10 minutes.

10Fluff with fork and enjoy.
