Basic Alfredo Sauce

- 1 1/2 tsp. vegetable oil
- 1/4 c. chopped onion
- 1 Tbsp. all-purpose flour
- 3/4 to 1 Tbsp. garlic
- 1 (12 oz.) can evaporated skim milk
- 1/2 c. grated Parmesan cheese
- 1/2 tsp. basil
- 1/4 tsp. black pepper
- salt to taste
Directions

1Saute onion in the vegetable oil until tender.

2Stir in the flour and garlic until smooth.

3Slowly stir in the evaporated skim milk.

4Cook over medium heat until mixture comes to a boil and begins to thicken, stirring constantly.

5Remove from heat and stir in cheese, basil and black pepper.

6Serve on hot pasta. Makes 1 1/2 cups sauce.
