- 7 medium potatoes, diced
- 7 carrots, diced
- water
- 2 tablespoons salt
- 1/2 teaspoon pepper
- 1 large onion, finely diced
- 5 large beets, shredded
- 3 tablespoons vinegar

Directions

1Brown bacon well but not crisp.

2Add onions, potatoes, carrots and saute for 5 minutes.

3Fill dutch oven 1 1/2 inches from the top with water.

4Add salt, pepper and shredded beets.

5Cook 20 minutes on medium heat.

6Add vinegar and cook until vegetables are tender.

7About 30 to 45 minutes.

8This is best if refrigerated over night, then served.
