Basic Chicken & Corn Soup

Ingredients

  • 1 Litre chicken stock
  • 2 tbsp Minced ginger
  • 2 cup Shredded BBQ chicken
  • 400 grams Creamed corn
  • 400 grams Corn kernels
  • 3 Stems spring onion, sliced
  • 2 tbsp Sesame oil
  • 1 Egg
  • 1 Salt & pepper

Directions

    Throw stock and ginger in pot and bring to the boil.

    Add chicken, corn, spring onion and oil.
  3. 3
    Simmer for 2 or 3 minutes.
  4. 4
    Meanwhile, in a small jug whisk egg and slowly pour into soup whilst stirring.
  5. 5
    Season and serve with a little extra spring onion and some crusty bread.

    Very basic, very nice.
