Basic Corn Bread

- 1 egg
- 1 1/3 c. milk or 1/3 c. buttermilk
- 1/4 c. vegetable oil or melted shortening
- 2 c. plain corn meal
- 1 Tbsp. baking powder
- 1 tsp. salt
Directions

1Mix up a cornbread batter and add a small can of whole kernel corn (drained).

2Mix and pour half of batter in a well-greased skillet.

3Brown 1/2 to 3/4 pound hamburger meat.

4Drain off grease. Sprinkle over corn bread batter to within 1 inch of edge of skillet.

5Top with Velveeta cheese, still keeping from within 1 inch of edge of skillet.

6Top this with the other half of cornbread mixture.

7Bake in 400° oven until brown.

8If you desire it to be hot, a few jalapeno peppers can be added to browned hamburger meat.
