- 3 cups semolina flour
- 34 cup water
- 3 egg whites
Directions

1In a large bowl, make a well with the semolina.

2Add the egg whites and work in well.

3Add the water and mix into a soft dough.

4Work in excess flour until it is dry and stiff, about 10 minutes.

5Place dough in a plastic bag and let it rest in the refrigerator for at least 1 hour.

66-24 hours is better.

7This will keep in the refrigerator at least one week.

8When ready to make pasta, take a small portion of the dough.

9Run it through a pasta machine or Kitchen Aid with pasta attachment.

10Run it through until it gets to one or two on the machine.

11Let it hang to dry for 30-60 minutes and it is ready to be cooked.

12You can also dry and store in freezer bags.

13Cook in simmering water for approximately 6-8 minute.
