- 1/2 teaspoon allspice ground
- 1 teaspoon salt
- 1 x black pepper to taste, fresh ground
- 1 pinch sage or marjoram, dried
- 1 ounce bread crumbs white, optional
- 1 x ginger ground
- 1 x mace
- 1 x nutmeg
- 1 x cloves
- 1 x cayenne pepper
Directions

1Mince the meat and fat twice, then mix very well and season.
