- 2 eggs
- 2 to 4 tablespoons melted schmaltz, (chicken fat)
- 1 cup matzo meal
- 1 teaspoon kosher salt
- 1/4 to 1/2 cup water
- 1 onion, chopped
- 1 tablespoon parsley, chopped
Directions

1In a large pan, over medium heat add the chicken fat.

2Saute onions until translucent.

3In a bowl beat eggs.

4Add matzo meal, salt, chopped parsley and onions in fat.

5To that add enough water to make a stiff batter, mix.

6Cover bowl and refrigerate 2-4 hours (or overnight).

7Wet hands and form balls (approx.

81-2 tablespoons).

9Add balls to large pot of boiling water.

10Cook 30 minutes and cut a matzo ball in half to check if cooked through

11Add to soup before serving.
