Ingredients
- 2 lb. veal or beef bones
- oil
- 2 large carrots
- 2 celery stalks
- 1 onion, cut in half (with skin left on) and stuck with 3 cloves
- 2 qt. cold water
- 2 bay leaves
- salt
- peppercorns
- pinch of leaf thyme, crumbled
- 3 Tbsp. tomato puree
Directions

1Rub the veal or beef bones with oil; place in a 400° oven for 20 minutes.

2Rub the carrots, celery and onion with oil.

3Roast everything for 20 minutes, until it is a rich, dark brown.

4Remove from the oven.

5Place in a pot with the remaining ingredients. Bring to a boil.

6Skim off foam; simmer 3 to 4 hours to reduce by one-third.

7Strain and freeze.
