Basic Melomel Recipe

Ingredients

  • 1 1/2 gal water
  • 5 kg honey
  • 4 tsp Acid blend
  • 1 Tbsp. gypsum
  • 4 tsp yeast nutrient
  • 1 pkt all purpose wine yeast healthy pinch of irish moss (1 tablet)
  • 3 1/2 lb Frzn Mixed berries
  • 4 lb frzn pitted Bing Cherries

Directions

    Boil 1 1/2 gallon (6l) of water and stir in honey.
  2. 2
    Add in other ingredients (nutrient, gypsum, acid blend) and reduce boil to simmer add in Irish Moss 10 min before finishing.

    Allow to cold and sparge into carboy with 2 or possibly three litres of room temperature water.

    Add in water to 1 inch below neck of carboy.

    Allow to cold to room temperature.

    Rehydrate yeast to instructions and add in to must.

    Allow to set for 24 hours., then add in thawed fruit slightly mashed.
