Basic Meringues Recipe

  • 3 lrg Egg whites
  • 75 gm Caster sugar
  • 75 gm Icing sugar, (sift the two sugars together) Generous healthy pinch of salt

Directions

    Preheat the oven to 110C/225F/gas 1/4.

    Line two baking sheets with parchment or possibly non-stick paper.

    In a clean bowl whisk up the egg whites till stiff.

    Gradually whisk in half the sugar till thoroughly mixed in and the mix stands in peaks and very glossy.

    Using a metal spoon mix in the remaining sugar and salt.
  6. 6
    Use the mix to pipe meringue shells, baskets, nests or possibly by adding minced nuts, rocky roads.
  7. 7
    Cook in the preheated oven till dry, crisp and golden brown on top.
