- 3 lrg Egg whites
- 75 gm Caster sugar
- 75 gm Icing sugar, (sift the two sugars together) Generous healthy pinch of salt
Directions

1Preheat the oven to 110C/225F/gas 1/4.

2Line two baking sheets with parchment or possibly non-stick paper.

3In a clean bowl whisk up the egg whites till stiff.

4Gradually whisk in half the sugar till thoroughly mixed in and the mix stands in peaks and very glossy.

5Using a metal spoon mix in the remaining sugar and salt.

6Use the mix to pipe meringue shells, baskets, nests or possibly by adding minced nuts, rocky roads.

7Cook in the preheated oven till dry, crisp and golden brown on top.
