  • 100 grams 00 pasta flour
  • 60 grams semolina
  • 1 eggs
  • 2 egg yolks

Directions

    Place all ingredients in a food processor and pulse until the mixture comes together like damp breadcrumbs.

    If the mixture is too dry to stick together as a dough, add another egg yolk and pulse again

    Tip the mixture onto a flat surface and bring together as a dough.

    Knead for 5-10 minutes until smooth.

    Wrap in clingfilm and leave in fridge until ready to use.
