- 1 c. water
- 1/2 c. butter, cut in small pieces
- 1/2 tsp. salt
- 1 c. all-purpose flour
- 4 large eggs
Directions

1Mix the water, butter and salt in a medium saucepan.

2Heat just to boiling.

3Immediately remove from heat and add the flour all at once.

4Stir with a wooden spoon until mixture forms a ball. Return to medium heat and cook, stirring constantly until paste has dried slightly.

5Remove from heat and let cool for 5 minutes. Beat in eggs one at a time, waiting until each is incorporated before adding another.

6When each egg is added and you start to beat it in, the mixture separates slightly and look like Southern dumplings.

7Continue beating until the mixture looks like mashed potatoes. Do this with each egg.
