Basic Pizza Dough

- 1 package Dry Active Yeast
- 1 teaspoon Sugar
- 1 cup Warm Water (120F)
- 18 cups Extra Virgin Olive Oil
- 1 teaspoon Salt
- 3 cups All-purpose Flour
Directions

1Put yeast and sugar a large mixing bowl, pour warm water on top.

2Let rest for 5-10 minutes to activate (it gets foamy).

3Add olive oil and salt to the yeast mixture.

4Slowly, combine the flour.

5Mix and knead for ten minutes.

6The dough hook on my Kitchen Aid, really helps this process along.

7Loosely cover and let rise for 45 minutes.

8Divide the dough as you please.

9Typically 3/4 of the dough makes a 16 pizza.

10The other 1/4 makes great garlic knots.

11Bake at 425F for 10-12 minutes.
