  • 1 whole frying chicken, rinsed and patted dry
  • salt and pepper
  • 2 cups water

Directions

    Place chicken on rack in roasting pan.

    Salt and pepper the inside and the outside of the chicken.

    Add water to the pan.

    Roast at 375*, uncovered, for 1 to 1-1/2 hours,until chicken tests done.

    Baste inside and out every 15 minutes.
