- 2 lbs fresh roma tomatoes
- 14 cup olive oil
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 1 carrot, grated
- 12 can tomato paste
- 5 -6 leaves fresh basil, chopped
- 2 tablespoons butter
- 14 cup red wine
- salt and pepper
Directions

1Chop tomatoes and put in a large saucepan with olive oil.

2Add onion, celery, carrot, tomato paste and basil.

3Cook over moderate heat, covered for 30 to 40 minutes.

4Remove lid and continue cooking 1 hour, stirring occasionally.

5When the sauce reaches the desired thickness, stir in the butter, wine and seasonings.
