- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 cans (28 ounces each) whole peeled tomatoes
- 1/4 teaspoon dried oregano
- Coarse salt and freshly ground pepper

1In a saucepan, heat oil over medium.

2Cook onion and garlic, stirring frequently, until translucent, 2 to 4 minutes.

3Add tomatoes with their juice and the oregano.

4Simmer, stirring occasionally and breaking up tomatoes with the spoon, until thickened, 20 to 30 minutes.

5Season with salt and pepper.

6Sauce can be refrigerated up to 4 days or frozen up to 3 months; let cool completely before storing in airtight containers.
