- 1/2 cups Butter, At Room Temperature
- 1 cup Sugar
- 2 whole Eggs, Separated, At Room Temperature
- 1 teaspoon Vanilla
- 1-1/2 cup Flour
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1/2 cups Whole Milk
Directions

1*Preheat oven to 350 degrees. Line cupcake pan with liners.

2*In a large bowl cream together the butter and sugar until light and fluffy, about 3-5 minutes.

3*Add the egg yolks, beating well.

4*Mix in vanilla.

5*In a separate bowl, combine flour, baking powder and salt.

6*Add the dry ingredients to creamed mixture, alternating with the milk. Mix well.

7*Beat egg whites until stiff peaks form.

8*Gently fold egg whites into the batter using a rubber spatula.

9*Fill cupcake liners 1/2-3/4 full.

10*Bake for 20-25 minutes.
