  • 7 cups water
  • 1 large onion, chopped
  • 2 -3 garlic cloves, minced
  • 1 large carrot, sliced
  • 2 large celery ribs, sliced
  • 1 medium potato, scrubbed and diced
  • 1 cup white cabbage, coarsely shredded
  • 2 teaspoons sodium-free seasoning

Directions

    Place ingredients in large soup pot and bring to a simmer.

    Cover and simmer gently over low heat for 40 to 45 minutes, or until veggies are quite tender.

    Strain the stock through a fine mesh strainer.

    Discard the solids or puree them and add to the broth for a thicker consistency.
