- 7 cups water
- 1 large onion, chopped
- 2 -3 garlic cloves, minced
- 1 large carrot, sliced
- 2 large celery ribs, sliced
- 1 medium potato, scrubbed and diced
- 1 cup white cabbage, coarsely shredded
- 2 teaspoons sodium-free seasoning
Directions

1Place ingredients in large soup pot and bring to a simmer.

2Cover and simmer gently over low heat for 40 to 45 minutes, or until veggies are quite tender.

3Strain the stock through a fine mesh strainer.

4Discard the solids or puree them and add to the broth for a thicker consistency.
