Basil Marinated Tomatoes

- 6 tomatoes, sliced 1/4-inch thick
- 6 thin red onion slices
- 1 Tbsp. thinly sliced fresh basil
- 1 Tbsp. olive oil
- 2 tsp. red wine vinegar
- 1/2 tsp. sugar
Directions

1In a saucepan:

2Cook rice, enough for 6 to 8 servings, until it is dry and sticks to the bottom of the pan.

3In a skillet, you can use either small diced chunks of pork steak, pork chops, ham, bacon, steak or leftovers, such as roast beef, etc.

4Brown meat in a generous amount of shortening (or drippings) and just before it is done, add chopped onions (greens and all).

5To this, stir in 1 egg and scramble.

6Add the rice.

7Sprinkle with soy sauce and continue to fry for awhile, stirring frequently.

8Serve hot.
