  • 1/4 c. chopped onion (1 small)
  • 2 large cloves garlic, finely chopped
  • 1 Tbsp. olive or vegetable oil
  • 2 c. chopped seeded tomatoes (2 medium)
  • 1 1/2 c. thinly sliced zucchini (1 1/2 small)
  • 1/4 c. snipped basil leaves or 1 Tbsp. dried
  • 1/4 c. grated Parmesan cheese

Directions

    Cook and stir onion and garlic in oil in 10-inch nonstick skillet over medium-high heat until onion is tender, about 2 minutes.

    Stir in tomatoes, zucchini and basil.

    Heat to boiling; reduce heat.

    Simmer uncovered until zucchini is crisp and tender, about 3 minutes longer.

    Stir in cheese.
