- 1/4 c. chopped onion (1 small)
- 2 large cloves garlic, finely chopped
- 1 Tbsp. olive or vegetable oil
- 2 c. chopped seeded tomatoes (2 medium)
- 1 1/2 c. thinly sliced zucchini (1 1/2 small)
- 1/4 c. snipped basil leaves or 1 Tbsp. dried
- 1/4 c. grated Parmesan cheese
Directions

1Cook and stir onion and garlic in oil in 10-inch nonstick skillet over medium-high heat until onion is tender, about 2 minutes.

2Stir in tomatoes, zucchini and basil.

3Heat to boiling; reduce heat.

4Simmer uncovered until zucchini is crisp and tender, about 3 minutes longer.

5Stir in cheese.
