Basque Potato Soup

Ingredients

• 1 lb. or more Italian sausage
• 4 small potatoes, peeled and diced
• 2 Tbsp. celery leaves
• 2 beef bouillon cubes
• salt to taste
• 1/4 tsp. pepper
• 1/2 c. chopped onion
• 2 cans diced tomatoes (with Italian seasoning)
• 1/4 c. chopped parsley
• 1 c. sliced celery
• 1 1/2 c. water
• 1 medium bay leaf
• 1 tsp. thyme
• 1 Tbsp. lemon juice
