Basque Potatoes

Ingredients
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. shredded carrots
- 1 clove garlic, minced
- 1/8 tsp. pepper
- 2 Tbsp. butter
- 10 oz. chicken broth
- 2 lb. potatoes, peeled and cut in 1 inch cubes
- 1/2 tsp. salt
Directions

1Saute onion, celery, carrot and garlic in melted butter until tender.

2Combine chicken broth with enough water to make 2 cups. Add broth, potatoes, salt and pepper to sauteed vegetables.

3Cover and simmer for 10 minutes.

4Remove cover.

5Simmer, stirring occasionally, 20 minutes or until broth is thickened.

6Sprinkle with parsley.

7Serves 4 to 6.
