Ingredients

  • 1 lb. Polish sausage, sliced in rounds 3/8-inch thick
  • 1/2 c. chopped onion
  • 2 (1 lb.) cans diced tomatoes
  • 4 potatoes (6 c.), pared and sliced
  • 1/4 tsp. pepper
  • 1/4 tsp. oregano
  • 1 c. celery, sliced
  • 2 tsp. chopped celery leaves
  • 1 1/2 c. water
  • 2 beef bouillon cubes
  • 1 bay leaf
  • 1 tsp. salt
  • 1/2 tsp. dried thyme
  • 1/4 tsp. basil
  • dash of lemon juice

Directions

    In large kettle, brown sausage over medium heat.

    Add 2 cans tomatoes, sliced potatoes, celery, celery leaves, water, beef bouillon cubes, bay leaf, salt, thyme, pepper, oregano, basil and lemon juice.

    Bring to a boil; reduce heat and simmer, uncovered, 40 minutes or until potatoes are tender.
