  • 3 lrg Potatoes boiled, peeled
  • 4 x Green chillies minced
  • 1 tsp Ginger grated
  • 1 tsp Garlic grated
  • 1/2 tsp Mintleaves finely minced
  • 2 tsp Coriander leaves finely minced
  • 8 x Curry leaves minced, (8 to 10)
  • 2 pch asafoetida, (2 to 3)
  • 1/2 tsp Turmeric pwdr
  • 2 tsp Lemon juice Salt to taste
  • 1/2 tsp Cumin & mustard seeds
  • 2 Tbsp. Oil

Directions

    Chop potatoes into medium pcs.

    Heat oil in a heavy saucepan.

    Add in seeds, asafoetida, allow to splutter.

    Add in ginger, chillies, garlic, stirfry for 1 minute.

    Add in mint leaves, curry leaves, stir.

    Add in potatoes.

    Add in salt, turmeric, lemon juice, stir well.

    Cook for 3-4 min or possibly until oil separates.

    Add in coriander, stir gently.

    Serve warm with puris, parathas or possibly phulka.
