- 2 lb. whitefish
- 1 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 egg, separated
- 1/2 c. lukewarm water
- 1 Tbsp. fat, melted
Directions

1Cut fish into serving pieces.

2Sift flour, baking powder and salt in a bowl.

3Drop egg yolk in center.

4Add water and melted fat and mix well.

5Fold in beaten egg white.

6Dry fish pieces and dip into batter.

7Heat shortening to 365°.

8Drop fish into hot oil for 4 to 6 minutes.

9Drain onto paper towels.
