- 1 lb. shrimp
- 3/4 c. flour
- 1/4 c. cornstarch
- 1 Tbsp. baking powder
- 1/4 c. Mazola oil
- 2/3 c. water
- about 1 qt. Mazola oil
Directions

1Shell shrimp, leaving tail section in; devein.

2Cut shrimp through the back, leaving tail attached.

3In bowl, mix next 3 ingredients.

4Gradually stir in 1/4 cup corn oil until smooth. Pour 1 quart oil into heavy 3-quart saucepan, filling no more than 1/3 full.

5Heat oil to 375°.

6Dip shrimp into batter to coat.

7Add a few shrimp at a time to hot oil.

8Fry for 1 to 2 minutes or until golden brown.

9Drain on paper towel.
