- 1/4 c. Egg Beaters
- 2 c. bread crumbs
- 3 c. mashed potatoes
- 1/4 c. onions, chopped fine
- 2 c. boneless chicken, cooked and diced
- 1 can mixed veggies
- 1/2 c. chicken broth
Directions

1Preheat oven to 350°.

2In medium-size bowl, mix eggs and potatoes together and set aside.

3Spray bottom of an 8 x 8-inch pan with Pam.

4Place chicken in single layer; add veggies and onions on top of chicken.

5Take potato mixture and drop by spoonfuls on top of that.

6Sprinkle bread crumbs over all.

7Bake for 30 minutes, until top browns.
