- 2 c. shredded, unpeeled apples
- 1 1/3 c. sugar
- 1 c. chopped cranberries
- 1 c. shredded carrots
- 1 c. chopped walnuts
- 2 1/2 c. unbleached flour
- 1 Tbsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. coriander
- 2 large eggs, beaten
- 1/2 c. vegetable oil
Directions

1Mix apples and sugar.

2Set aside.

3Grease muffin tin.

4Preheat oven to 375°.

5Add cranberries, carrots and nuts to apple mixture and stir gently to combine.

6Mix dry ingredients and add to apple mixture.

7Stir well.

8Stir in eggs and oil and mix gently.

9Divide among muffin cups.

10Bake 25 minutes.

11Cook for 5 minutes in pan and remove to wire rack.

12Makes 12 muffins.
