- 2 heads of broccoli (1 1/2 pounds)
- 1 1/2 cups water
- 4 fresh bay leaves
- 4 tablespoons unsalted butter
- 3/4 teaspoon salt
Directions

1Peel the broccoli stems.

2In a pot wide enough to hold the whole broccoli heads, bring the water, bay leaves, butter and salt to a boil.

3Add the broccoli and cover.

4Cook over moderate heat, turning once, until tender, 15 minutes.

5Transfer the broccoli to a warmed platter and cover with foil.

6Boil the cooking liquid until reduced to 1/4 cup, 5 minutes.

7Pour the liquid over the broccoli, discard the bay leaves and serve.
