Ingredients
- 2 tablespoons olive oil
- 2 shallots, coarsely chopped
- 4 garlic cloves, coarsely chopped
- 1 cup sherry vinegar
- 1/4 cup dark brown sugar
- 6 plum tomatoes, coarsely chopped
- 2 cups chicken stock or low sodium canned chicken broth
- 1 tablespoon Spanish paprika
- Salt and freshly ground pepper
Directions

1Preheat grill or side burner.

2Heat oil in a medium saucepan over medium heat.

3Add shallots and garlic and cook until soft, about 4 to 5 minutes.

4Add vinegar and reduce by half.

5Add remaining ingredients, stir and bring to a boil.

6Reduce heat and simmer for 20 minutes.

7Transfer mixture to blender and blend until smooth.

8Return mixture to a clean saucepan and cook for 15 to 20 minutes or until thickened.

9Season with salt and pepper.

10Let cool to room temperature.
