  • 6 pieces chicken
  • 8 cups water
  • 2 tablespoons kosher salt
  • 14 cup brown sugar
  • 2 garlic cloves, crushed with side of large knife
  • 4 sprigs thyme
  • 2 slices bacon
  • 1 bunch thyme
  • extra virgin olive oil

Directions

    Combine water, sugar, salt, garlic, and thyme in large mixing bowl.

    Add chicken and cover.

    Refrigerate for 1-4 hours.

    Wrap the bacon slices around the bunch of thyme.

    Add olive oil to a large saucepan and heat on medium heat.

    Add the bunch of thyme and cook for 4 minutes.

    Add onion and garlic and cook for 5 minutes, making sure not to color.

    Add the remaining ingredients, give the sauce a stir, reduce heat to low and let simmer for 20 minutes.

    Remove about 1 1/2 cups and set aside.

    Discard the thyme bunch.

    Preheat oven to 375.

    Place chicken on cookie sheet and bake for 15 minutes.

    Remove chicken and brush liberally with sauce.

    Replace chicken and cook for an additional 30 minutes.
