Ingredients

  • 1 lb. pinto beans
  • 3 lb. boneless pork roast
  • 1 Tbsp. salt
  • 1 Tbsp. cumin
  • 2 Tbsp. chili powder
  • 1 tsp. oregano
  • 7 c. water
  • 1/2 c. chopped onion
  • 2 cloves garlic, minced
  • 1 (4 oz.) can chopped green chilies

Directions

    Place beans (which have been soaked in 4 cups water).

    Roast pork and rest of ingredients in rest of water in heavy kettle. Cover and simmer about 5 hours or until roast falls apart.

    Break up roast.

    Uncover and cook until thick, about 1/2 hour.

    Serve over corn chips.

    Pass condiments:

    chopped tomatoes, diced avocado, chopped onion, shredded lettuce, grated cheese (Cheddar) and taco sauce or hot sauce.
