- 1 lb. pinto beans
- 3 lb. boneless pork roast
- 1 Tbsp. salt
- 1 Tbsp. cumin
- 2 Tbsp. chili powder
- 1 tsp. oregano
- 7 c. water
- 1/2 c. chopped onion
- 2 cloves garlic, minced
- 1 (4 oz.) can chopped green chilies
Directions

1Place beans (which have been soaked in 4 cups water).

2Roast pork and rest of ingredients in rest of water in heavy kettle. Cover and simmer about 5 hours or until roast falls apart.

3Break up roast.

4Uncover and cook until thick, about 1/2 hour.

5Serve over corn chips.

6Pass condiments:

7chopped tomatoes, diced avocado, chopped onion, shredded lettuce, grated cheese (Cheddar) and taco sauce or hot sauce.
