Ingredients

  • 1 (16 oz.) pkg. dried pinto beans
  • 2 strips bacon
  • 1 large yellow onion, finely chopped
  • 1 clove garlic, minced
  • 3 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 c. shredded sharp Cheddar cheese (about 4 oz.)
  • 1/2 tsp. hot red pepper sauce
  • 1/2 Tbsp. unsalted butter

Directions

    Pick over and rinse pinto beans.

    Place in a large saucepan. Add enough unsalted water to cover. Bring to a boil over high heat.

    Remove from heat. Cover and let stand 1 hour.
